SPD3159 Food: Miss you – Hong Kong Traditional Food

Potato chips, sweets and chocolate are most of the Hong Kong people favorite food. For younger, have you ever thought that what did your parents like to eat when they were young? For elder, do miss the food that you always buy when you were children? In this article, I would like to introduce the Hong Kong traditional food to the teenagers and recall elders’ memories.  

Traditional candy & coconut wrap
Traditional candy &coconut wrap was found since Qing Dynasty. It has a long history. It was made of maltose and thin pancake. Firstly, melt the maltose. Then, pull and drag the maltose by using a stick till it turns write. Next, freeze the maltose. At that time, the maltose looks like the front of spring onion.Therefore, in Chinese, it called " Sugar onion pancake". Finally, put the maltose, peanut, desiccates coconut on the pancake and roll it.It is soft on the outside but crispy on the inside.

Today, it is hard to find traditional candy &cocount wrap. However, you can find it near the Exit A of Yau Ma Tei Station and near the Tai Po KCRC Station.

Chinese style white sugar steamed cake
Chinese style white sugar steamed cake is white and sweet. It takes time and effort to make this dessert. The steps are as follows.

First of all, put whisk rice flour, water and sugar into a mixing bowl. Cook them until the mixture has become thick. Then, use a sieve to filter the mixture and leave to cool. Mix the yeast and warm water and add them in the cooled rice mixture together with the baking powder. Stir and combine all the ingredients. Rest it for 8 hours. Grease a steamer and put the rice mixture into it. Steam it for about 20 minutes.

Nowadays, it is difficult to find traditional Chinese style white sugar steamed cake because some of them taste sour. However, there is a shop in Shum Shui Po, called “Kwun Kee”. It is famous for Chinese style white sugar steamed cake. The shop owner said that they can sell more than two hundreds pieces a day. 
   

Black Sesame Roll
In 70s and 80s, it was easy to find “film roll” in many Chinese restaurants. Black sesame roll looks like film roll. That is why it also called “film roll”. It is a refrigerated desert. It tastes sweet. The texture is smooth and soft.

Black sesame roll has seven layers. The first step is to stir-fry black sesame. Next, put them into a stirring machine and add some water. Put whisk rice flour, water chestnut flour, sesame oil and “black sesame water” into a bowl. Mix them together. Then, put the mixture in a plate and form a thin sheet. Cool the “black sesame sheets” individually. Make seven levels and roll them up as sesame roll.
